Keto recipes: Keto Ceviche (Raw Fish Salad)


Ceviche or Raw Fish Salad as we call it here in New Zealand. It is an ‘island’ dish of fresh raw fish marinated in Lemon juice and Coconut cream. To this is added salad veg of your choice.

This is perfect for the KETO lifestyle as it contains good fats and is high in protein. We eat fresh fish at least twice a week if not more. The fish is always got from our adventures on the water in our little boat. This recipe can be used with any fresh fish. Here I have used Snapper.

Kokoda as it is called in Fiji and married with Avocado it is just perfect Keto lunch! So refreshing!

Ingredients (Serves 8)

Fresh Snapper fillets – skinless (500g)

Lemon juice – 1 cup (230g)

Himalayan Pink salt – 1tsp (5g)

Cucumber – 1 cup (150g)

Avocado – 1 (135g)

Tomato – 1 (120g)

Capsicum – 1 (85g)

Red Onion – (75g)

Ginger – 1 inch piece chopped fine

Green Chili – 1 chopped fine

Coconut cream – 1 ½ can (600mls)

Method

In a large bowl, add the finely chopped Snapper. Add the lemon juice. Mix. Add all other salad ingredients. Mix well. Add salt to taste.

Last of all add in the Coconut cream. Leave in the fridge and enjoy this refreshing salad as a side dish, entre or main.
